About Crystal Springs, Mississippi

Crystal Springs is a city of 4,862 people in Copiah County, a stop on the Illinois Central Railroad 25 miles south of Jackson. Its growers used the railroad to send crops to northern markets, and the town became the hub of truck farming and market gardening for all of Mississippi.

Fruit trees came before the vegetable fields. Powhatan Robinson was already raising apples in large numbers on his farm by 1860, and in 1870 Dr. H. W. Stackhouse brought scientific methods to growing peaches for buyers up north. By 1886 the town was shipping peaches by the carload, but the orchards were not kept up, and in time strawberries, tomatoes, cabbage, beans, peas and radishes became its chief shipments.

  • Tomatoes from Italian seedAround 1875, N. Piazza began raising tomatoes by scientific methods, using seed from Italy. The Acme tomato was introduced in 1876, and from then on the tomato crop grew year after year. On the busiest days, Crystal Springs sent out as many as 32 car loads of tomatoes.
  • Strawberries and cabbage by railF. M. Brewer led the way in growing peas and beans for shipment in 1874. The Stackhouse family first grew strawberries for the northern market in 1882, and at the height of the season the town shipped about two car loads a day. Cabbage shipments reached ten car loads in one day. Nearly 700 car loads of fruit and vegetables left each year, giving the town a national reputation, while lumber and box making employed other workers.
  • Deacons for Defense, 1966Violence followed the civil rights laws of 1964 and 1965, so the armed Deacons for Defense and Justice set up centers in 1966 and 1967, one here and one in neighboring Hazlehurst. They guarded Black protesters who joined the NAACP in a boycott of white merchants, pressing stores to integrate and to hire Black workers. The protesters won: the stores ended their discriminatory practices, and African Americans gained some jobs in local businesses.
